I've been cooking zucchini using this recipe for about 15 years now. And we are not tired of them at all! When the zucchini season begins, zucchini stewed in sour cream is the first thing I rush to prepare.

They are excellent both from young and tender zucchini and from huge overgrown ones with hard skin and seeds. Of course, you need to remove the skin and clean out the seeds. You can use sour cream of any fat content, whichever you like best; over the years I have cooked with absolutely any kind.
You can serve such zucchini as a side dish for cutlets or fried fish; they are very tasty on their own, but my family’s favorite accompaniment for them is young boiled potatoes with butter and dill and fresh rye bread.

Recipe for zucchini stewed in sour cream

Ingredients:

Zucchini – 1 kg.
Sour cream – 200 ml.
Onions – 2 pcs.
Vegetable oil– 3 tbsp.
Black pepper - to taste(ground)
Dill – 1 p.
Starch – 1 tbsp.
Salt - to taste
Sugar - to taste

Preparation:

Peel and wash the onions. Cut into thin half rings.
Heat vegetable oil in a deep and wide saucepan. Place the onion in a frying pan, lightly sprinkle it with sugar and fry until light golden brown, very lightly.

Wash the zucchini, if necessary, remove the skin. Cut in half lengthwise and remove the seeds. If the zucchini is very young and tender, you can leave the seeds. Cut the zucchini into thick slices.

Add zucchini slices to the frying pan with the onions, stir and add salt. Close the lid. Simmer the zucchini, stirring occasionally, for about 10 minutes over medium heat. They should release juice and become soft, but not fall apart. Mix sour cream with starch. If the zucchini has released little juice, you can add a little water to the sour cream. Pour the sour cream mixture into the frying pan, stir and bring to a boil over low heat. Chop the dill and add to the zucchini. Pepper and salt to taste. Serve hot or warm.

Zucchini stewed with sour cream is prepared as follows:

1. Take the zucchini, rinse it with water, remove the skin, and cut the pulp into cubes.

2. Prepare the onion. We remove the husks. Chop the peeled onion.

3. In a heated frying pan, mix two types of oil - vegetable and butter. Lay out the onions. Fry it until transparent. Then add chopped zucchini. Mix. Fry these ingredients for a few minutes. At the end, salt the dish and put sour cream in it. Mix well. But we don’t turn it off, but simmer for 7-10 minutes. As a result, we get juicy and flavorful zucchini with sour cream. The recipe is extremely simple. Even schoolchildren can use it.

Product set:

  • 200 g hard cheese;
  • a bunch of greenery;
  • sour cream - a glass;
  • 2 g dried thyme;
  • medium zucchini - 2 pcs.;
  • 10 ml vegetable oil;

Cooking instructions

Step #1. We wash the zucchini in running water. We remove the “butts”. The pulp must be cut into circles 1.5-2 cm wide. Salt each piece on both sides. Then put it in a flat plate. You should lie down for a while before. During this time they will release juice. Let's drain it. If there are large seeds in the zucchini, be sure to remove them.

Step #2. Take a rectangular baking dish. We lay out the zucchini in rows, overlapping each other. Sprinkle with spices. We put the form with zucchini aside for now.

Step #3. In a bowl, mix chopped garlic and sour cream. Salt. Grind dried thyme using a coffee grinder or a special mill. Then add to the sour cream and garlic mixture. Mix. Leave for 5-7 minutes. Now we need to apply the resulting mixture to the zucchini. It is best to do this with a spatula. Distribute the mass evenly.

Step #4. Grind a piece of cheese on a grater. It can be of any variety, “Kostromskaya”, “Russian” and so on. Sprinkle the grated cheese over the zucchini and sour cream placed in the mold.

Step #5. Preheat the oven by setting the temperature to 200°C. We send the form along with its content to it. Our dish should be baked for 20 minutes. We take out the most tender zucchini with a golden cheese crust from the oven. We distribute them on plates and serve them to the table. An excellent addition to the dish would be fresh vegetables or boiled rice.

Multicooker recipe

Ingredients:

  • tomatoes - 3 pcs.;
  • medium zucchini;
  • 2 tbsp. l sour cream;
  • onion - one head;
  • garlic - a couple of cloves;
  • a bunch of parsley;
  • 1 tbsp. l vegetable oil.

How to prepare zucchini with sour cream in a slow cooker:

1. Lay out all the necessary products on the table. Let's take the zucchini. We wash it and remove the skin with a knife. Cut the pulp into slices. The size of each piece should not exceed 2 cm.

2. Remove the husk from the onion. Cut into rings.

3. Peel and chop the garlic.

4. Wash the tomatoes with water and chop them into slices. The peel can also be removed. Then the tomatoes will be softer.

5. Place the chopped onion and zucchini in a slow cooker. Add a little oil. Start the “Baking” mode. There is no need to close the lid. The frying time for these ingredients is 10 minutes. Add tomatoes and chopped parsley. Salt. Mix well.

6. Time it for 5 minutes. Add sour cream. Close the lid. The dish should be cooked for 10 minutes. Then we serve it to the table in a deep plate. We wish you bon appetit!

  • 3 g butter;
  • 150 g zucchini pulp;
  • 3 g wheat flour;
  • 20 g sour cream.

Ingredients:

  • 2 zucchini
  • 2 heaped spoons of sour cream
  • 2 cloves garlic
  • 1 onion
  • salt, ground pepper
  • a little refined oil for frying zucchini
  • glass of water
  • a couple of spoons of flour

Preparation:

Initially, we will wash the zucchini, if it is young, we will simply wipe it with a towel, if it is old, we will peel it, remove the seeds, and cut it into thin, about half a centimeter, circles.

Prepare the flour in a plate, cut the onion into half rings.

Now we take two frying pans (you can get by with one, using them alternately).
Add the zucchini (immediately before frying, otherwise the juice will be released), dip in flour and fry lightly in hot oil until golden brown.

Chop the onion and fry in a second frying pan (or after the zucchini is fried in the same frying pan).

Remove the fried zucchini to a plate. Once everything is fried and the onions are ripe, we will put them back in the pan.

One layer, onion on top, then a second layer.

Take sour cream, add some pepper, dilute with some water so that the sauce becomes like kefir, add previously chopped garlic, and pour in the zucchini.

Now all that remains is to stew them. If you cut it thinly and fry it deeply, then 5 minutes is enough, you just need to let it sit for another 10 minutes so that the vegetables are soaked in the sour cream sauce. If you cut it thickly and fried it lightly, then increase the simmering time a little, look at the condition of the zucchini - they should become soft, but not spread out, so that they still hold their shape.

Let it brew for a bit, exchange flavors, and serve. If you add some mashed potatoes to these zucchini, it will be a hearty lunch; if you add rice or buckwheat, it will be an excellent healthy dinner.
