How to make deep-fried cheese balls

  1. Three small shavings of cheese.
  2. Carefully separate the whites from the yolks, add a pinch of salt and work with a mixer until a strong, stable mass is obtained. To ensure that the protein mixture is safely whipped to the desired consistency, before starting work, we check the dishes for cleanliness and dryness. Remains of fat, any contaminants, as well as admixtures of yolks or excess moisture can disrupt the process, and then it will be difficult, and sometimes impossible, to bring the whites to the desired state. A properly whipped mixture becomes noticeably denser and does not run off or move when the work bowl is turned over.
  3. Add shavings of cheese to fluffy whipped whites. Next add 2 tablespoons of sifted flour.
  4. Mix the protein and cheese mixture. We get a soft and sticky dough. If the mixture spreads and does not hold its shape at all, you can add flour, but just a little - there is no need to oversaturate and weigh down the cheese dough with flour.
  5. Sift flour onto a kitchen board for further breading. With palms moistened in water, pinch off pieces the size of a walnut or even a little smaller from the cheese mass, roll into balls and place on a flour layer. You will get approximately 10-15 blanks.
  6. Dip the balls thickly in flour, covering all sides with a white coating. Shake off excess flour so that it does not burn in the hot oil.
  7. In a small, thick-bottomed saucepan, heat the vegetable oil (only refined oil is suitable for deep-frying). It is important that it is warm enough before dipping the balls. You can check by throwing a small piece of cheese dough into the pan - if there are no signs of boiling, then the deep fat is still cold. The amount of oil depends on the size of the dish - it is necessary that the balls are completely immersed in oil. Load the balls into the heated fryer - cook in small batches, about 3 pieces at a time. We lower the products on a slotted spoon so that they do not touch the bottom (otherwise the resulting crust may burst and the cheese will flow out). Keep the balls in the sizzling oil until browned on all sides. Do not forget to constantly stir the products, not allowing them to stick together and touch the bottom.
  8. We catch the browned cheese balls with a slotted spoon and transfer them to a plate covered with napkins - the paper will help remove excess fat. At the same time, we are preparing the next batch.
  9. Let's start tasting before the cheese balls have time to cool completely. You can supplement the snack with spicy ketchup or prepare it in advance (for example, as in the shawarma recipe).

How to make mozzarella cheese balls

  1. Place the mozzarella balls in a colander - the whey should drain completely. To help the cheese melt better during frying, take the mozzarella out of the refrigerator in advance and let it warm up to room temperature. If you get the mozzarella not in balls, but in one whole piece, you can cut it into large cubes and cook it that way.
  2. Mix the egg with milk, add a pinch or two of salt and ground pepper. Shake the mixture with a fork, trying to bring it homogeneous. Distribute the sifted flour and breadcrumbs into different plates (the latter can be replaced with a loaf of bread, removing the crusts and grinding it into crumbs in a blender bowl).
  3. Blot the mozzarella balls with a paper towel to remove any remaining moisture. Then dip into flour one by one and roll on all sides.
  4. We “bathe” the flour-coated ball in the milk-egg mixture.
  5. Next, generously bread it in breadcrumbs. Then again dip into the liquid egg mixture and roll in breadcrumbs again. This double breading is necessary so that the cheese does not leak out during deep frying.
  6. As in the previous recipe, thoroughly heat the oil and fry the balls until golden brown. If the oil is well heated, the products will cook quickly, in about 20-40 seconds. Don't forget that you need to deep-fry in small portions, otherwise the temperature of the oil will drop sharply.

To give the balls a pleasant appearance and make them even tastier, they are breaded. You can roll it in special breadcrumbs, flour, chopped yolk or day-old bread. The results are delicious, crispy and gooey breaded cheese balls - their taste is simply amazing. According to this recipe, the preparations need to be fried in heated vegetable oil. It is poured so as to completely hide the balls.

Ingredients:

  • milk – 2 tbsp;
  • flour – 0.5 tbsp;
  • egg – 3 pcs.;
  • mozzarella – 200 g;
  • vegetable oil – about 300 ml;
  • yesterday's white bread - 0.5 loaves;
  • pepper, salt - to taste.

Cooking method:

  1. Beat eggs together with milk, add salt and pepper.
  2. Then gradually add flour and mix.
  3. Crumble the bread.
  4. Dip the mozzarella balls into the dough, then roll in the crumbs.
  5. Place all the preparations in the refrigerator for half an hour, then fry in hot oil until golden brown.
  6. Place on a paper towel. This will allow excess oil to drain.

How to make cheese balls at home - general recommendations

You can improvise a lot on the theme of cheese snacks. The balls look very impressive - they go off with a bang. To make them elegant, it is better not to make blanks that are too large in size. The cheese ball is too big and it will be difficult to eat. It is convenient to serve hot balls on skewers, and you can arrange them on lettuce leaves. You will get a real delicacy if you use red caviar for decoration.

It's easy to make cheese balls at home, even with sweet ingredients like chocolate. In this case, it is better to take cream cheese. You just need to mix it with chocolate. A little butter is added to them. To decorate the sweet dessert, use coconut flakes or nuts crushed into crumbs. She also prepares a similar snack with strawberries. In this case, curd cheese is used. The cooking principle is the same, but you can decorate with lemon balm or mint leaves. This dessert goes well with tea.

The tastiest thing is to make snack balls from different types of cheese. This time I had 2 types of hard cheese and soft feta cheese.

INGREDIENTS:
for 4 servings

Hard cheese - 200 gr
Feta cheese - 50 gr
Eggs - 2 pcs
Flour - 50 gr
Breadcrumbs - 50 gr
Oil for frying - 400 ml

Grind the hard cheese on a fine grater, mash the feta cheese with a fork. Place in a deep bowl, add one raw egg and mix well until smooth.

Roll the resulting dough into small balls - the size of a walnut. To prevent the balls from sticking to your hands and make them even, wet your hands with cold water.

From the given amount of ingredients I got 12 cheese balls.

Now it is important to bread the balls well so that the cheese does not leak out during frying. Beat the egg in a bowl along with a couple of tablespoons of water. Roll the ball in flour, then in egg and breadcrumbs.

We carry out the procedure with each cheese ball, after which we repeat the breading: again flour, egg, crackers. Thus, the cheese will be under double protection.

Place the finished balls in one row on a plate and put them in the refrigerator for 20-30 minutes. During this time, the crust will harden, which will allow you to keep the melted cheese inside during frying.

Heat the vegetable oil well in a saucepan or tall ladle. We lower our cheese pieces into boiling oil for literally a minute: take them out as soon as they turn golden. Immediately place them on a paper towel to remove excess fat.

We fry the cheese balls in small batches: 4-5 pieces, depending on the size of the dish where the oil is boiling. The balls should float freely.
