  • pour the contents again and let them brew again for 15 minutes;
  • pour sugar into jars;
  • pour boiling water over everything again and roll up the jars with dogwood compote.

In this recipe, sugar should not be poured into a jar, but make syrup out of it. At the same time, the berry compote itself comes out very sweet. And if you don’t like so sweet drinks, then before preparing the compote, it is recommended to dilute it with water at your discretion.

  • 0.5 kg of berries;
  • 3 pieces of large pears;

  • 2.5 liters of water.

Fill the jar halfway with boiling water, cover with a lid and leave for 20 minutes. Step-by-step preparation:

  1. 1. Pour water into an enamel bowl and put on fire until it boils.
  2. 2. Pour dogwood into prepared jars (300 grams per 3-liter jar).
  3. 3. When the water boils in the pan, pour boiling water into the container with the fruits, cover with a lid and leave for 45 minutes to warm the berries.
  4. 4. After 45 minutes, pour the water from the cans back into the pan and bring to a boil. Dogwood fruits should remain in the container.
  5. 5. After the water boils, repeat the procedure: pour the berries into the jars again and leave for 45 minutes.
  6. 6. After the time has passed, drain the water from the cans into a saucepan, add sugar there (at least 1/2 cup per 3 liters of water). Stir the syrup and heat to a boil.
  7. 7. Pour boiling syrup into the jars for the third time to the very top and roll up the lid.

Place the jars with the finished drink upside down on the prepared blanket and cover them with the free end. After complete cooling, the compote can be sent to a cool place for storage.

You should not be upset that the drink has a light appearance after rolling. After a couple of days it will infuse and become brighter.

Dogwood with apples

Raspberries and blackberries, as well as fruits such as apples and peaches, go well with dogwood in compote.

Ingredients for a 3-liter jar:

  • dogwood - 500 gr;
  • ripe apples - 3 pcs. medium size;
  • sugar - 1 glass;
  • clean water - 3 l.

Cooking method:

  1. 1. You don’t need to sterilize the jars; just wash them with baking soda, rinse thoroughly under the tap and pour boiling water over them in a large bowl. The lids should be boiled.
  2. 2. Wash apples and drupes and rinse with boiled water. Cut the fruits into several parts, removing the core with seeds.
  3. 3. Place an enamel pan of water on the fire.
  4. 4. Place dogwood into prepared jars, filling them to about 1/3 full.

  7. 7. When the water boils, fill the jars with dogwood and apples exactly halfway.

  9. 9. By that time, you need to boil the remaining water again, adding a little raw water to it so that there is enough for all the jars.
  10. 10. When the water boils, fill the container with dogwood, apples and sugar to the brim with boiling water, then roll up the lids.

Turn the finished compote over, and after a day it can be moved to a storage location. This seaming is well stored even at room temperature.

  • Dogwood goes well with other fruits: apples, pears, plums, grapes, raspberries. By adding them, you can get a new interesting flavor “bouquet”.
  • If you have unripe dogwood fruits, they can be used to make compote in a couple of days. There is one secret for speeding up the process of their ripening after removal from the bush. To do this, pour the berries into a tight bag, tie it, and leave it at room temperature. Typically, dogwood under such conditions gains maturity in 1–2 days.


Recipes

You can make compote not only from fresh dogwood, but also from frozen and dried.

If the drink is brewed for the purpose of subsequent canning, prepare jars for sealing in advance. They need to be washed well with soda and heat sterilized with hot steam or dry heat in the oven.

In a saucepan

This compote can be prepared for every day without seaming.

Bring two and a half liters of water to a boil. Reduce the heat slightly and put sugar and dogwood in a 1:1 ratio. In this case, you will need 250 grams of fruit and 1 glass of granulated sugar. Next, cover the pan with a lid and cook the contents for 7–10 minutes.

Delicious compote is ready.

You should not drink it right away - it is advisable to let it sit for a couple of hours so that the aroma and taste of the berries are better revealed.


In a slow cooker

The drink is prepared from dried dogwood. For a five-liter multicooker container, you need 3 measuring cups of dried fruits and a glass of granulated sugar.

You can prepare compote in the “Soup” or “Stew” modes. The simmering time is at least an hour. The finished hot drink should be allowed to stand under the lid for at least four hours.


Canned

This recipe involves rolling the finished drink under the lids, so you need to prepare clean jars in advance. It is most convenient to take three-liter ones.

For 3 liters of water you will need 350 grams of fresh dogwood. They need to be put in jars. Pour water brought to a boil over the fruits up to the neck, cover with lids and let stand hot for at least 15 minutes.

After this time, the water must be poured back into the pan. The berries must remain in the jars, so you must use a large sieve or lid with holes.

Add 2 cups of granulated sugar to the hot dogwood infusion. The sweetened water must be brought to a boil again.

Pour the syrup into the jars with the syrup reheated to a boiling point. They must be immediately rolled up with lids using a special key.


The jars should be placed upside down on a towel, covered with a blanket or any warm material. This is necessary to increase the temperature maintenance time. They should be kept covered for about a day.

For storage, it is better to move the canned compote to the cellar or to a cool balcony.

With added fruit

Another recipe for canned dogwood compote - with the addition of apples or pears.

Place 1 cup of fresh dogwood in a three-liter jar. To the berries add 3 cored apples or pears, cut into small pieces. The choice of fruit to combine with dogwood is yours. You can experiment and make different combinations, and then choose the option you like best.

Pieces of fruit and dogwood fruits need to be covered with granulated sugar and pour boiling water to the very top. Cover the three-liter jars with a lid and place them in a saucepan with hot water to sterilize for half an hour.

After this, the compote needs to be rolled up under the lids. When turned upside down, the jars are insulated for a day.
