I am sure that many housewives love to pamper their loved ones with homemade cakes, but the usual cakes are not always convenient to prepare. For myself, I discovered an ideal alternative to this delicacy - a chocolate cupcake, which, compared to small products, is more reminiscent of a pie (the recipe with photos will be given below).

  • Inventory and kitchen appliances: whisk, clean deep bowl, cake pan (silicone can be used).

Required Products

Features of product selection

For our cupcake it is better to take fresh chicken eggs, sour cream and butter, and the latter needs to be softened a little before use (just take it out of the refrigerator at least half an hour before use). You can use sour cream either store-bought or homemade, the main thing is that in the latter case it is not too thick, since it will need to be stirred longer.

The first cupcakes are considered to be peculiar cakes that appeared at the end of the 19th century and were baked in bowls, where the main ingredients of the dough were mixed.

How to make chocolate cake: step-by-step recipe

There is nothing complicated in preparing a chocolate cake, and if you follow all the instructions step by step, you will get a wonderful result with minimal physical effort. So what needs to be done:

  • To begin, take a clean and deep bowl. Mix 150 g of butter with 200 g of sugar in it (it is more convenient to crush the butter with a fork).
  • Then add the eggs to the resulting mixture and mix everything thoroughly again until a homogeneous composition is obtained (no need to beat with a mixer).
  • Next, add 200 g of sour cream and mix everything again with a fork or whisk.
  • At this stage, set the resulting mass aside and begin creating a dry mixture: add 2 tsp to 300 g of flour. baking powder and 3 tbsp. l. cocoa powder, mix these ingredients until smooth.
  • When you have both mixtures ready (liquid and dry), all that remains is to combine them together and gently mix until smooth to obtain a dough ready for baking.

  • Next, you need to pour the resulting mixture into the prepared mold, pre-greased with butter, and place the dough in the oven, preheated to 180 °C.

The duration of baking a chocolate cake in a mold is about 60-70 minutes.

The more precise cooking time for the dessert depends on the characteristics of your oven and the form in which the delicacy will be baked. The above times apply to cakes baked in a silicone pan.

To make sure this dessert, like any other pie, is ready, you can lightly pierce it with a match: If it remains dry, without sticking dough, it’s time to take the cake out of the oven.

Cupcake frosting recipe

While the finished dessert is cooling, you can start preparing the chocolate glaze for the future cupcake. To do this, mix 50 g of butter, 100 g of sugar, 3 tablespoons of water and 2 tbsp. l. (with top) cocoa powder.
After mixing all the ingredients a little, place the container with them on the fire and continue stirring the mass so that it does not burn.

As soon as the sugar crystals are completely dissolved, remove the pan from the stove. The result is a nice brown frosting for our cupcake that you need to drizzle on while it's still warm.

How to beautifully decorate and serve a cupcake

Whatever the purpose for which you use this recipe for a chocolate cake prepared in the oven (just for yourself or also for treating guests), it would be better to decorate it immediately before serving.
For example, after pouring the prepared glaze over the delicacy, you can immediately cut it into pieces and arrange it in a chaotic order on a plate, sprinkle with grated nuts or decorate with pieces of fruit.

Also, before serving, you can divide the dessert into separate pieces and add ice cream to it, with which it goes well. That is, there are quite a lot of options for decorating the delicacy; it all depends only on your imagination.

Every year the British celebrate National Cupcake Week, which takes place in September.

There are tricks to preparing any dish, and this dessert is no exception. For example, before adding eggs to the butter-sugar mixture, it is better to first break them into a separate container to prevent shells from getting in. Also, after pouring the dough into the mold, it is better to compact it a little with a spoon, leveling it on top (this way you can avoid the formation of large bubbles and as a result you will get an even cake).

If you are using a silicone mold, after pouring the dough, it is better to place it on a standard metal baking sheet for better stability in the oven. When installed on a grill, the soft shape may bend and the product will lose its ideal appearance.

Once the dessert is ready, remove it from the oven and set it and the pan aside to cool completely. Only after this can you remove it from the mold for decoration. If you try to remove a hot product, it may break.

Video recipe for making chocolate cake

I have been using the described recipe for quite a long time, because in my opinion, it is very accessible and simple. However, I recently came across a video online about the preparation of this wonderful dessert, and I must say, I discovered something interesting (for example, silicone molds, which give the dough an original look, in themselves make the cupcake attractive). Take a look, because visually it’s easier to understand all the nuances of any production process.

Invitation to discussion and possible improvements

As you can see, making chocolate cake at home is very simple. Moreover, its preparation does not require the use of special products. Although, I have often come across similar recipes with the addition of other ingredients (milk, vanillin, etc.). Maybe someone has tried similar options or knows other interesting recipes, I will be glad if you share them with me.

Both adults and children love sweet confectionery products. Microwave chocolate cake is especially popular among those with a sweet tooth.

It can be prepared in a few minutes, which is very convenient when you have a shortage of free time. For example, in the morning before work or before the arrival of unexpected guests.

In the modern rhythm of everyday life, you can always find time and place to please your loved ones with delicious and aromatic pastries.

If previously a cake could only be baked in the oven in half an hour, then with the advent of new technological devices this can be done in a shorter time.

Recipe: Chocolate cupcake in a mug

If you can’t wait to cook something delicious, but are sorely short of time, I suggest turning to this baking option.

Interestingly, you can bake a chocolate cake in the microwave in 5 minutes right in the mug from which you drink tea every day.

However, there is a small limitation: you should not take iron utensils; they are not intended for use in a microwave oven.

The volume of the dish should be at least 300 ml, since the cake dough will “grow” significantly and a “cap” will form on its surface, which will protrude beyond the edges by about one and a half cm.

The ingredients below are for one serving of dessert. If you still need to treat several people, increase the amount of food.

It is most convenient to knead the dough directly in the mug, then all portions will be exactly the same.

Ingredients:

3 tbsp. spoons of white sugar; 4 tbsp. spoons of flour; 2 tbsp. spoons of cocoa powder; 30 g sl. oils; one egg; a quarter teaspoon each of baking powder and salt; 3 tbsp. spoons of whole milk.

It will take you about five minutes to cook one cupcake in the microwave. If you really don't want to bother with extra dirty dishes, knead the dough directly in the mug.

One immutable rule is that the dough should be free of lumps, and this is easy to achieve if the mixture of liquid components is sent to the dry ones and thoroughly mixed with a spatula.

Progress:

  1. Sift the flour and mix it with sugar.
  2. Add salt and baking powder. These two components play a key role: salt shades the chocolate flavor and makes it richer, and baking powder makes the cake airy and porous.
  3. Add another bulk ingredient - cocoa. I would like to note that all powder components are measured in level tablespoons.
  4. Go ahead and beat the egg into the container, then add the melted butter, there should be 3 tablespoons of it. If at the time of kneading the dough you do not have butter, vegetable oil can completely replace it, but only without any foreign smell.
  5. While stirring the mixture, pour in the milk. Achieve complete homogeneity and desired consistency. It is important that the dough is not thicker than rich sour cream, otherwise the cake will turn out very dense and harsh.
  6. If you kneaded the dough in a bowl, pour it into a mug. By the way, it is not at all necessary to lubricate its inner walls with fat; the cake will easily be removed onto a serving plate.
  7. Bake the dessert at maximum power. Time yourself for two minutes to start, and if that's not enough, add another 30 seconds. The treat should not be overcooked in the microwave, otherwise it will turn out dry.
  8. After a while, you will notice how the dough has risen above the edges of the mug. You shouldn’t be afraid that it is about to “run away”, because in a couple of minutes it will already have time to “grab.”
  9. When the baked goods are ready, carefully remove the mug from the oven so as not to burn yourself.

You can eat the cake directly from the mug, after sprinkling it with powdered sugar, or you can put it on a plate. There is no need to wait for the dessert to cool down; when cold, it loses its properties.

Recipe: Coffee Chocolate Cake

The recipe for this cupcake is for those housewives who lack time due to being busy at work or for some other reason.

If you are one of them, then the method of cooking baked goods in the microwave will be of great help to you.

You will have time to prepare a chocolate cake in 5 minutes, while the kettle is boiling and the tea is brewing.

All you need to do is quickly punch up some simple dough and pop it in the microwave for a few minutes.

You will need:

one egg; teaspoon of instant coffee; 3 tbsp. spoons of flour and white crystalline sugar; a quarter spoon of baking powder; 2 tbsp. spoons of cocoa and exactly the same amount of whole milk; a pinch of salt and 2 tbsp. tablespoons of cold-pressed vegetable oil (olive or sunflower).

Preparation:

  1. Measure out the bulk ingredients and mix them in a bowl.
  2. Beat in the egg, then pour in the milk and vegetable oil.
  3. Using a whisk, beat the dough until smooth.
  4. Pour it into a mug with a volume of at least 300 ml. This reserve is necessary so that the cake has room to “grow” while in the microwave.
  5. Place the mug in the microwave oven and set the panel to maximum power. Two minutes is enough to bake a chocolate cake, but if necessary, you can increase the time if it turns out that the dessert is not baked well enough. Add 30 seconds, that's enough.

Recipe: Eggless Chocolate Cupcake

Eggs are almost always used in baking. But there are times when they are not in the refrigerator, and you need to bake the dessert right away.

After all, guests who unexpectedly show up for a visit will not wait for you to run to the store.

This is where microwave baking recipes come to the rescue, where eggs are not an essential component of the dough.

Even their absence will not prevent a savvy housewife from quickly making a fragrant and airy cupcake.

Take:

2 tbsp. spoons of wheat flour and cocoa powder; dessert spoon of sugar; 3 tbsp. spoons of kefir; tsp baking powder and tbsp. a spoonful of vegetable oil.

Progress:

  1. In a small bowl, whisk kefir, sugar, butter and cocoa powder. To prevent lumps from forming, sift the cocoa.
  2. Mix the flour with baking powder and add to the rest of the ingredients.
  3. Beat the dough into a uniform consistency and place it in a mug.
  4. Adjust the microwave baking mode in advance - high power and 3 minutes.

Remove the finished baked goods from the mug and eat warm. When the cake cools and sits for a while, it will become a bit dry. Remember this nuance and serve the treat fresh.

  • Vanilla or ground cinnamon are suitable for flavoring baked goods. An interesting solution would be orange zest, but you shouldn’t get too carried away with it. If you add a lot of zest to the dough, it will give the dessert an unpleasant bitterness.
  • If you don’t have the butter specified in the recipe at home, replace it with any vegetable oil. The main thing is that it does not have a pronounced odor, that is, it is refined.
  • Bake the dessert in a glass, porcelain or ceramic mug. Make sure there are no metal elements on the dishes.
  • A cupcake with chocolate or fruit filling turns out juicier, and therefore tastier. To bring this idea to life, pour half the batter into a mug, then add a piece of chocolate, a spoonful of jam or berry puree, and fill with the remaining batter.
  • Place the dessert in the microwave for a minimum number of minutes. It's better to add time later than to end up with a dry lump of dough.

My video recipe

It doesn’t matter what age, gender, nationality or social status you are - as soon as anyone hears the fragrant smell of a chocolate cupcake, they will do anything to get it! Chocolate is known for lifting your spirits and making you happy. This is the drawback of this tasty delicacy, because many unhappy and lonely people consume it in immeasurable quantities and gain weight as a result. Well, this is not surprising, even medicine can become poison if not observed in moderation. Therefore, if you are moderate in tasting delicious and healthy chocolate, there will be no harm. The same goes for chocolate cake. This extraordinary pastry combines the delights of chocolate and the softness of sponge cake. Any self-respecting confectionery shop can prepare chocolate cake, but believe me, you can make the dish just as good at home.

Chocolate cake - preparing food and utensils

How does a regular cupcake become chocolate? This happens thanks to the addition of cocoa. Don't skimp on this product. You can use inexpensive confectionery cocoa powder, but it is best to purchase a real divine drink in dry form with a high content of cocoa beans (from 90%). Using this cocoa for baking, you will immediately see the difference - the chocolate cake will turn out to be a noble brown color with an incredible aroma. It is best to buy such cocoa not in supermarkets, but in specialized outlets selling tea and coffee. Of course, the price will be many times higher than that of confectionery powder, but believe (and check) that it’s worth it.

The necessary ingredients are also flour, egg, sugar, salt. The flour should be sifted before cooking, then the dough will be more airy.

Chocolate cake recipes:

Recipe 1: Chocolate Cupcake

Make a traditional cake without any additives. The delicacy can be made either in small molds (it is best to use silicone ones) or in one large one. Do not use margarine or spread instead of butter to make the cake. This “cunning trick” in cooking may not help you save money, but at the end you will get a very tasty dish, and not a surrogate.

Required ingredients:

  • Cocoa for cake 5 tbsp. l.
  • Flour 2.5 cups
  • Milk 200 ml
  • Egg 5 pieces
  • Sugar 1.5 cups
  • Butter 150 grams
  • Sunflower oil

Cooking method:

  1. First of all, let's prepare the glaze, which is also one of the components of the dough. To do this, you need to melt the butter, mix it with sugar and cocoa. We will take approximately two-thirds of the total mass for dough, and the rest will be used for decoration.
  2. When the mixture of butter, sugar and cocoa has cooled, add flour in a thin stream, baking powder, egg, and milk. Knead well.
  3. Grease a cake pan with vegetable oil and pour the dough into it. Send the dough to bake in the oven for 20-25 minutes at 180 degrees.
  4. When the cake is ready, remove it from the pan and brush it with frosting. The treat is ready!

Recipe 2: Chocolate Cherry Cupcake

Sweet and sour cherries go well with chocolate. Surprise your loved ones by making a chocolate cupcake with cherries.

Required ingredients:

  • Flour 200 grams
  • Egg 4 pieces
  • Butter 100 grams
  • Baking powder 1 sachet
  • Sugar 1 cup
  • Milk 200 ml
  • Cherry 1 cup
  • Vegetable oil

Cooking method:

  1. Wash the cherries and remove the seeds from the berries. Let the cherries drain because excess juice will interfere with baking.
  2. Combine dry ingredients, mix well.
  3. In a separate container, beat the eggs until thick foam.
  4. Melt the butter, pour into the mixture, stir. Add milk, beaten egg and turn the mixture into a dough without lumps.
  5. Add cherries to the dough and mix well again.
  6. Grease the baking dish with oil, pour out the dough and place in the oven to bake for 20 minutes at 180 degrees.

Recipe 3: Chocolate Cupcake with Chocolate

Chocolate cupcake with chocolate? What is this, a reservation? Actually there is no mistake here. Typically, in baking “with chocolate,” cocoa plays the role of the desired ingredient. In addition to cocoa, we will also add pieces of dark chocolate.

Required ingredients:

  • Flour 2 cups
  • Chicken egg 4 pieces medium size
  • Sugar 100 grams
  • Cocoa 4 tablespoons
  • Chocolate bar 100 grams
  • Milk 150 ml
  • Butter 150 grams
  • Vegetable oil

Cooking method:

  1. Let's prepare the dough as described in previous recipes. To mix all dry ingredients. Pour milk into it.
  2. Beat the egg separately until foamy.
  3. The butter needs to be melted and poured into the mixture in a thin stream, stirring continuously. Add an egg there too. The dough should be homogeneous, without lumps.
  4. Break the chocolate into pieces and stir into the dough.
  5. Grease a cake pan and pour the batter into it. Bake the chocolate cake in the oven for twenty minutes at 180 degrees.

Recipe 3: Chocolate cake with water

Let's prepare delicious pastries using water. For this recipe, we will not use butter, but will take a little vegetable oil, so the chocolate cake will not be as high in calories as in previous versions. But even this “light” version will drive you crazy, both with aroma and taste. Add nuts and raisins to the chocolate cake, it will be much tastier.

Required ingredients:

  • Flour 2 cups
  • Corn starch 2 tablespoons
  • Chicken egg 5 pieces
  • Vegetable oil ½ cup
  • Water 200 ml
  • Sugar 150 grams
  • Powdered milk 2 tablespoons
  • Cocoa 4 tablespoons
  • Hazelnut 50 grams
  • Peanuts 50 grams
  • Raisins 50 grams
  • Walnut 50 grams

Cooking method:

  1. First of all, turn on the oven at 220 degrees - the oven for making a cake according to this recipe should be well heated.
  2. Mix water, butter, cocoa and sugar. Place the mixture on the fire, stir until the first bubbles appear. Once the glaze has boiled, remove from heat. Refrigerate.
  3. In a separate container, use a mixer or blender to beat the egg. When it turns into a thick foam, add the cooled glaze to it in a thin stream.
  4. Mix all dry ingredients and add to liquid mixture. Turn everything into a homogeneous dough without lumps.
  5. Chop the nuts. Pour raisins with hot water for 10 minutes, after rinsing them. Drain the water and rinse the raisins again.
  6. Add nuts and raisins to the dough.
  7. Grease a cake pan with oil and pour the batter into it. Place the cake in the oven for 10 minutes at 220 degrees. Then reduce the temperature to 160 degrees and bake for another 20-25 minutes.
  1. Chocolate cake is very tasty bitter, especially if you make it with solid chocolate. But according to cooking rules, it is best to put it in the refrigerator overnight after cooking.
  2. To make the dough more crumbly, you can replace the baking powder with corn starch (it is healthier than potato starch). But it’s better not to use soda.
  3. To enhance the flavor of the cake, add vanilla or rum essence to the batter.
  4. The color and taste of the finished product depends on the amount of cocoa. The less you add this additive (two tablespoons), the more delicate and light the color of the cake will be. If you add 4-5 tablespoons of cocoa (real, not confectionery), the cake will be almost black, with a thick chocolate taste.

Homemade baked goods will always be more delicious and aromatic than store-bought products. We offer several recipes for chocolate cupcakes - from the simplest, “quickly prepared” ones, to more complex options with additives.

We suggest making a classic chocolate cake in the oven, also called a “pound cake.” To prepare it, all products are taken in the amount of 1 pound = 450 grams.

The chocolate cupcake will delight your family with its delicate taste.

But since this amount of dough makes a lot, and the cake comes out big, we suggest reducing the portions a little, but keeping the main rule - the same amount of products:

  • 250 g butter;
  • 250 g sugar;
  • 250 g eggs;
  • 250 grams of flour.

And also to create a chocolate cupcake you will need:

  • 2 table. l. cocoa;
  • quarter stack boiling water;
  • a packet of vanillin;
  • 2 stacks powdered sugar.

First of all, prepare a cocoa drink: boil water and dissolve cocoa in a small amount.

Separately combine sugar and flour.

Beat the soft butter until the mixture lightens and forms a creamy consistency. Next, add vanilla and powder and continue beating for another 5 minutes. As a result, the sugar-butter mass will become almost white and airy. Next, add the eggs one at a time, continuing to beat.

By this time, the cocoa should have cooled down; it should be poured in small portions into the whipped products.

Finally, add the mixture of dry products and milk. Beat for another 2-3 minutes.

Pour the dough into a mold and bake in an oven at 180 degrees. In one hour. To determine the readiness of the baked goods, pierce it in the middle with a toothpick or a wooden stick - if it comes out of the dessert dry, without lumps of wet dough, then the cake is ready.

Important! All products must be at room temperature during cooking.

Baking in silicone molds

  • 200 g margarine;
  • 4 table. l. cocoa powder;
  • 1 ½ cups Sahara;
  • ½ cup milk;
  • 2 stacks sifted flour;
  • ½ tsp. l. soda;
  • 3 medium eggs.

The first step is to melt the margarine. In order to speed up this process, it is recommended to cut the margarine into small cubes. After that, transfer them to a small ladle or pan and place on low heat. While the margarine is melting, you need to stir it a little, otherwise it will burn.

When the product becomes almost completely liquid, add cocoa, sugar and milk. Cook, stirring with a whisk, until the mass becomes homogeneous. When the workpiece begins to boil, remove from the stove and let cool. The temperature of the workpiece should become slightly warm.

As soon as the butter-chocolate mixture becomes a little warm, you can start preparing the dough. This will take a little time, so you can immediately turn on the oven to heat up to 180 degrees.

Add eggs, soda and flour to the cooled mixture. If desired, you can add vanillin. Mix everything well.

The dough is ready. For the quantities suggested above, you will need 12 small silicone muffin tins. Place the dough in the molds and place in the oven on a baking sheet for a third of an hour. Check the degree of baking with a toothpick. If the inside of the muffins is still a little damp, leave for another 3-5 minutes.

On a note. The chocolate cake can be covered with chocolate glaze, or greased with sugar/honey syrup.

Microwave in 5 minutes

You don't have to look for special molds: a regular cup will do.

Even a schoolboy can prepare a chocolate cupcake in the microwave:

  • egg;
  • 4 table. l. Sahara;
  • 4 table. l. flour;
  • 3 table. l. milk;
  • 2 table. l. dry cocoa;
  • 3 table. l. soft butter/margarine;
  • ½ tsp. l. vanilla sugar;
  • ½ tsp. l. soda;
  • a pinch of salt.
  • optional raisins, crushed walnuts, candied fruits, chopped chocolate pieces, coconut flakes.

Place all the products in a deep bowl, first grind with a whisk, and then beat with a mixer. Then we put the dough into silicone molds or regular mugs, filling only half (the cupcakes will rise), put them in the microwave for 2.5 minutes at a power of 600 W. We check the readiness by piercing it with a toothpick; if not ready, set it for 30 seconds and check again.

Before serving, the cupcakes can be topped with melted chocolate, powdered sugar, jam or condensed milk - to suit your taste.

On a note. Ready-made chocolate cupcakes can be stored in the refrigerator for no more than 4 days. For storage, baked goods are wrapped in cling film or a lunch bag.

Fast Lenten option

  • 1 ½ cups wheat flour;
  • 3 table. l. cocoa;
  • 1 tsp. l. vanillin;
  • 1 stack Sahara;
  • 1 tsp. l. soda;
  • ½ tsp. l. salt;
  • 1 tsp. l. vinegar;
  • 5 table. l. vegetable oil;
  • 1 stack water.

First of all, mix all the dry ingredients in a large bowl, quench the soda in vinegar, and only then add it to the bowl. Then add water and oil. Knead the dough with a spoon, and then by hand.

Place the dough into a greased pan and level the top with a spoon or silicone spatula.

We bake the lean cake at 180 degrees. within 40 minutes.

On a note. Half of the flour can be replaced with whole wheat flour.
