Ingredients

  • 3–4 chicken eggs
  • 100 g sprat in oil
  • 2 tbsp. l. sour cream
  • 1/2 onion
  • 6–8 sprigs fresh parsley
  • 2 pinches of salt
  • 2 pinches of black pepper

Preparation

1. Hard boil the eggs, peel and cut each in half.

2. Place the required amount of sprats into the bowl. It’s better to play it safe and take good fish, even if the price is a little higher, but the appetizer will probably turn out delicious. Sprats need to be mashed with a fork or finely chopped. You can leave the tails for decoration. Also transfer the yolks into the bowl.

3. Peel the onion and chop it very finely. If desired, add sour cream or mayonnaise to the bowl. Salt and sprinkle with spices.

4. Gently stir with a fork until the filling reaches a more or less uniform consistency.

5. Use a spoon to fill the cavities in the whites with the filling, and also make a “cap” on top.

Vegetable oil – 1 tbsp.

So, I sliced ​​the bread. Or rather, I used buns - the ones that cost 3 kopecks. The fact is that my mother taught me to make exactly these sandwiches when I was about 12 years old, and they were always prepared with these buns. It's much tastier than using regular bread.

How to cook with photos step by step





Let's start cooking by boiling the eggs. Before boiling eggs, they must be thoroughly washed in running cold water. Pour cold water into a saucepan, add a couple of pinches of salt and carefully lower the eggs. Place the container on the fire. Wait for the water to boil and time for 10 minutes. After boiling for ten minutes, remove the eggs and place them in cold water. Allow 5-8 minutes for eggs to cool. Remove from the water and pat with a towel to remove excess moisture.




For now, let's get on with the rest of the ingredients. Peel the onion. Rinse and dry. Cut into arbitrary pieces. Take a suitable frying pan and add sunflower oil. Heat slightly, add chopped onion. Fry over moderate heat until soft and lightly browned. Cool the fried onions to room temperature.




Peel the eggs. Carefully cut into two halves using a sharp knife. Separate the yolks into a separate bowl.






Add cooled fried onions to the boiled yolks. Sprinkle with a little salt and ground black pepper. Add just a little mayonnaise and blend with an immersion blender to a creamy consistency.




Place the egg whites on a flat dish. Place the yolk cream in a piping bag fitted with a star tip. Pipe the cream nicely into the center of the egg white.




Place sprats on top of each egg.






Decorate with a snowflake cut out of hard cheese and a parsley leaf. Use a special plunger to cut out snowflakes. Stuffed eggs with sprats are ready.
