It’s better to take the butter out of the refrigerator the night before so that it softens, but it’s okay if you don’t have time to do this.

  1. First, in a deep bowl, knead the butter with a fork, add cottage cheese and mix thoroughly.
  2. Now we extinguish the soda with vinegar and add it to the dough. The dough should seem to swell and become more fluffy.
  3. Next, add vanilla sugar, sift the flour and add it to the dough in parts. Mix everything well so that there are no lumps left. The dough should be soft and elastic. It's okay if it sticks to your hands a little.
  4. Cover the dough with cling film and put it in the refrigerator for 20 minutes, rolling it in flour.
  5. Now turn on the oven to 180 degrees. This temperature is the most suitable; it will help bake the cookies tender and tasty without drying them out.
  6. After the oven has heated up and the dough has right time in the refrigerator, sprinkle the table with flour and dump the dough onto it. Roll out the dough into a layer 1-1.5 cm thick. Use cookie cutters to squeeze out cookies. If you don’t have any molds on hand, you can simply cut it into cubes, diamonds, stripes, or whatever you like.   7. Place the cookies on a baking sheet and place in the preheated oven until the cookies are a beautiful golden color. It takes me exactly 20 minutes. After time has passed, we take the finished cookies out of the oven, put them on a plate and we can treat our family and friends!
