Although hedgehogs and meatballs are very similar to each other, we do not forget that these dishes are still different. Therefore, in this case, meat balls should not be fried, thereby depriving them of their very zest - protruding needles.

For cooking tomato sauce you can use ground tomatoes, homemade juice or tomato paste.

Required Ingredients:

  • 0.5 kg of minced meat;
  • ½ st. rice
  • 1 + 1 onion (for hedgehogs and for gravy);
  • 1 non-cold egg;
  • 3 tomatoes;
  • 1 medium carrot;
  • 1 tbsp flour;
  • salt, sugar, pepper, herbs.

Cooking steps:

  1. Boil rice until half cooked.
  2. To form “hedgehogs”, we take twisted meat, finely chopped onion, cooled rice, egg, add salt and pepper, mix thoroughly.
  3. We roll small koloboks from the resulting minced meat, which should be laid out on the bottom of a thick-walled stewpan or pan. There will be a lot of gravy, so whatever the chosen container, its sides should be high.   4. For gravy, fry grated carrots with chopped onions in a pan, when the frying is ready, add tomatoes puréed on a blender or pasta diluted in water. Required Ingredients:

  • 1 onion;
  • 1 Bulgarian pepper;

  1. We rub on coarse grater peeled onion or pass it through a blender.

Cooking method:

1. We wash the meat, cut it into small pieces, scroll in a meat grinder until minced meat is formed, mix until smooth, salt, pepper, break three chicken eggs into it and mix everything again. For 1 kilogram of minced meat, I have about 2 teaspoons of salt (without a slide), and pepper - 1 teaspoon. But be careful, salt, alas, is different in salinity. Therefore, it is better after the first spoonful of salt - mix and try a piece of minced meat "on the tongue with salt", and then, if necessary, add more salt.

2. My carrots, clean and 2 pcs. (the remaining 3 are left on the gravy) rubbed on a fine grater. Pour it into the minced meat and mix everything.

3. Potatoes (4 small pieces) are also washed, peeled and rubbed on a fine grater. Also add to the minced meat and mix everything well. Many do not add potatoes, but my relatives and friends who have tried this dish believe that it is tastier this way, and the meatballs are soft and very juicy.

4. Onions, clean, wash, and 4 pcs. (the rest will go to the gravy) cut into small pieces and add to the minced meat. So that the eyes do not pinch, cut the onion in half, and pour hot water over it, after which we chop. Most recipes indicate that the onion must be fried, but I believe that we do not need excess fat, it (the onion) will cook well in the process of baking meatballs.

5. We wash (several times) rice in cold water until the water that you drain from it becomes transparent, without starch whiteness. Pour hot water (water should be 3 times more than rice, i.e. 1 cup of rice and 3 cups of water), cook it over low heat for 10 minutes, drain into a colander, rinse with cold running water, drain excess water ( we defend in a colander for about 5 minutes), and add to the minced meat. We mix everything.

Rice is better not cooked, as it will still be stewed inside the meatballs during baking.

6. To minimize the cooking time of the whole dish, the whole procedure with cooking rice, I advise you to start even before you start cutting vegetables, because if you do it first, then during its cooking you will have enough time to fuss with vegetables.

7. Well, here we are at the finish line))). Mince is ready. We make meatballs out of it. The size of meatballs should be no more than a girl's fist, because if they are large (high), then when baked in a pan, they will not be completely covered by the sauce, and they will dry out.

Small advice, so that the minced meat does not stick to the hands when sculpting meatballs, hands should be moistened in cold water, before each "tuck" of minced meat.

8 . Add a small amount of vegetable oil to a hot frying pan, bring it to a boil, and put the "raw" meatballs on it. Fry on all sides, until the state of "grasped" and "brown" meat. And then put it on a baking sheet.

9. As an option, for lovers of "healthy" cuisine, meatballs can not be fried, but immediately put on a baking sheet, and the baking sheet should not be greased beforehand, since the meatballs themselves will give fatty juice.
