Yeast dough begins with a dough that maximizes the ideal “rising” of the dough. First you need to prepare the standard components.

So, you will need:

  • 1 spoon or ½ package of fresh, dry yeast;
  • ½ teaspoon salt;
  • 2-3 tablespoons of sugar;
  • 1 glass of milk;
  • 30 grams of margarine or butter;
  • 1 egg;
  • flour.

Preparing the dough

The yeast must be diluted in a deep cup with half a glass of milk or water at room temperature. Add salt and sugar. Stir and place in a warm place. 20 minutes will be enough.

As time passes, the dough will begin to foam. You need to gradually pour milk into it. It must be warm or at room temperature. Instead of milk, yogurt, kefir or mayonnaise is suitable.

Add butter, previously melted and cooled, to the resulting mass. Next add the egg, preferably beating it slightly.

Knead the dough

The process begins with proper preparation. Sprinkle the work surface with a small amount of flour. You can additionally place a container of flour nearby to repeat this simple procedure. This will prevent the dough from sticking to the surface during kneading. To keep your hands clean during the process, lubricate them with vegetable oil.

Now you can gradually mix 500 grams of wheat flour into the prepared dough and knead a soft dough. If you add flour, the dough will be tight. Knead the dough until it begins to hold its shape. It is advisable to sift the dough every time during kneading, even if this was done in advance - this makes the baked goods surprisingly fluffy.

Gather the yeast dough into a ball, place it in a cup and cover with a linen cloth or napkin.

Leave the dough warm for 20-30 minutes, and then knead it again. Place again in a warm place for another 20 minutes. We repeat this procedure three to five times - this is a recipe for the perfect dough. It takes another 1-2 hours for it to fully rise. If necessary, you can wait less, but this will reduce the volume of baking, and the taste of the pie will change greatly.

Recipe for berry filling for autumn pie

The filling is the heart of the pie. You need to take the choice of berries and fruits seriously. Although frozen berries mixed with sugar are suitable for the filling, it is advisable, if the season allows, to give preference to fresh berries.

To add a “zest”, you can experiment with the filling. All garden types of berries (cherries, raspberries, currants) go well with lingonberries.

Sour cream would be a great addition. Apple, pear, lemon zest or pine nuts are also suitable. In addition, you can season everything with cinnamon and a pinch of nutmeg and the taste will instantly transform.

The filling should not “crumble” in the finished pie, so we will make it in the form of jelly.

You will need:

  • 1-2 cups lingonberries;
  • 2 tablespoons starch;
  • 2 tablespoons of water;
  • 1 cup of sugar.

Before preparing the filling, you need to sort the berries, removing leaves and branches. Then wash and wait for the juice to drain;

Starch is needed to prevent the filling from leaking during baking. We dilute it in two tablespoons of water. You can slightly change the recipe and instead of starch, first roll the berries in flour.

Pour the berries into a thick-bottomed pan and add sugar. Mix everything well and put on low heat.

When the lingonberries have boiled, remove the berries from the heat and pour the well-mixed solution into them. Then mix well again and leave to cool.

Knead the dough for the Stolle pie

  • 3 tsp mix dry yeast, sifted flour (470 g) and 3 g of salt in a deep and spacious bowl.
  • In a separate cup, beat one egg with a whisk and mix it with 250 ml of milk heated to 30 degrees.
  • Pour the egg-milk mixture into a bowl with flour, add a packet of soft butter there, and knead an elastic (not sticky) dough.
  • Transfer the finished dough into a plastic bag and place it on the bottom shelf of the refrigerator for 2 hours.
  • After the specified time, take out the risen dough, put it back into the bowl, beat it, releasing carbon dioxide, and leave it warm for 40 minutes.
  • When the dough rises again, knead it again, place it on a floured table and divide it into portioned lumps the size of a large orange, then cover with a napkin and leave to lie for another 15 minutes.

  • Lingonberries, ground with sugar or stewed (steamed).

Preparation

First, prepare the dough: slightly heat the milk or water (no higher than body temperature) and dissolve the sugar and yeast in it. Add 2 tablespoons of flour, mix thoroughly and place in a warm place for 20-30 minutes.

After this time, pour the dough into a bowl and begin to add flour there, knead the dough. The open pie with lingonberries turns out moderately sweet, with a thin dough. An amazingly tasty pastry filled with sticky caramel, in which the berries do not crumble, but are filled with a thick component.

Ingredients:

  • butter – 130 g;
  • sugar – 210 g for caramel;
  • lingonberries – 0.5 kg of fresh berries;
  • water – 4 tbsp. caramel spoons;
  • salt;
  • lemon – 1 tbsp. spoon, for caramel;
  • flour – 310 g;
  • water – 50 ml;
  • egg – 1 pc.

Preparation:

  1. Take a bowl. Add flour. Add some salt. Add a tablespoon of sugar. Pour in water.
  2. Cut the butter into pieces.
  3. Place in flour. Grind.
  4. Knead the dough. Roll into a ball. Wrap with film. Place in the refrigerator.
  5. After an hour, grease the mold with oil.
  6. Place the dough. Distribute over the bottom and sides. A mold with a diameter of 26 cm is ideal.
  7. Cover with parchment paper. Take the beans and pour them into the mold. Thanks to its gravity, the dough will remain flat and will not rise during baking.
  8. Place in the oven. Mode 200 gr.
  9. After a quarter of an hour, check readiness.
  10. If the dough is not ready, then remove the beans and paper and move the mold to the lower level. Cook for eight minutes.
  11. Prepare caramel. To do this, pour sugar into a saucepan. Pour in water and lemon juice.
  12. There is no need to interfere. Boil until it turns a light golden color.
  13. Mix berries with sugar.
  14. Place half of the lingonberries on the dough.
  15. Pour in half the caramel.
  16. Add berries.

  • starch - 2 tbsp. spoons;
  • dough – 500 g yeast;
  • sugar – 220 g;
  • cinnamon – 0.5 teaspoon;
  • apple – 2 pcs.

Preparation:

  1. Rinse the berries. Place on a paper towel. Dry.
  2. Cut the apples in half. Cut out the insides.
  3. Take a grater. Grate.
  4. Place apples and lingonberries in one container.
  5. Add sugar, starch, cinnamon. Mix.
  6. Roll out the yeast base. Cut off a third.
  7. Place on a baking sheet coated with oil.
  8. Spread the filling. Fold the edges.
  9. Cut the remaining third of the dough into strips.

  11. Leave for half an hour.

  13. The mode must be set to 195 degrees.
  14. After 20 minutes you can take it out.

  2. Take a baking sheet. Spread parchment paper.
  3. Coat with oil.
  4. The package contains two layers of dough. Roll one out. Line a baking sheet.
  5. Rinse the berries. Dry using a paper towel.

  7. Sprinkle with sugar.

  • apple – 3 pcs.;
  • starch - 1 tbsp. spoon;
  • lingonberries – 150 g;
  • powder – 3 tbsp. spoons.

Preparation:

  1. Place oil in a bowl. Place in the microwave. Melt.
  2. Pour water into the container. Add yeast. Leave for a quarter of an hour.
  3. Add flour. Pour in the oil.
  4. Beat in the egg. Add sugar. Add milk. Add some salt.
  5. Knead the dough.
  6. Leave in container. Cover with a bag. Leave for a couple of hours. It may take more or less time. It is necessary that the mass becomes twice as large.
  7. Cut the skin off the apples.
  8. Cut. Remove the seeds.
  9. Cut into pieces.
  10. Rinse the berries. Blot dry with a paper towel. No moisture is needed for the cake.
  11. Place berries and apples in a salad bowl. Add powder and starch. Mix.
  12. Pinch off 200 g from the dough.
