I want to offer you Ukrainian zucchini for the winter. They are our family's favorite winter snacks. It turns out they are slightly spicy, rather even spicy, while fragrant and satisfying thanks to vegetable oil. Vegetables are fried and shifted with garlic. And although I know about a hundred recipes for harvesting zucchini, I constantly return to this. After all, the Ukrainian-style zucchini recipe for the winter in jars is truly universal.

Ingredients

Calculation of products for one liter jar:

  • fresh zucchini - 1.7 kg;
  • vegetable oil - 100 grams (for frying and adding to the jar);
  • garlic - 15 grams;
  • dill greens - 10 grams;
  • salt 10 - 12 grams;
  • vinegar 6% concentration - 60 grams.

Cooking

We select ripe and undamaged fruits. The diameter of zucchini should not be more than 5 - 6 cm. This is the ideal size for blanks. Wash the zucchini in cold running water. Throw them in a colander or a fine sieve and let it drain completely. Then we cut off the tails and cut the zucchini into circles about 2 - 2.5 cm thick. After that, the chopped vegetables are fried on both sides in hot vegetable oil until golden brown.

Made? Now lay the zucchini fried in a pan in a single layer and cool them. Let's prepare the garlic. We peel it, wash it and grind it in a mortar with salt. Dill greens cut into small pieces.

Let's prepare the jars for harvesting. To do this, at the bottom of dry, clean jars, preferably sterilized, pour vegetable oil and vinegar. Their quantity is indicated above in the ingredients. Put dill, salt and crushed garlic. Then tightly lay the fried zucchini. We cover the jars with lids and place them in a pot of hot water for sterilization. Banks with a capacity of 1 liter - sterilize for about 40 minutes. After processing, the jars filled with vegetables are hermetically sealed, turned over and cooled. You can wrap it in a blanket for 12 hours to allow the jars to stay hot longer - such an additional sterilization. And then, when our cans of blanks are completely cooled, we will send them to a dark and cool place. This is how zucchini is prepared in Ukrainian for the winter.

Moreover, you can even not take special care of them: zucchini is a strong culture, it will even break through weeds (moderate ones, of course). One drawback - they get bored quickly. The well-known eggplants “Spark” are prepared according to this principle, however, we do not make zucchini in adjika, but, in fact, we can do it if we replace the blue ones with zucchini in the above eggplant recipe.

So, there are many options, choose any recipe as a basis, and then improve it to your taste. I think that the Ukrainian zucchini recipe will appeal to many spicy lovers. True, the sharpness here is moderate, only due to garlic, this is not adjika.

Ingredients:

Zucchini 2 kg, garlic 5 cloves, vinegar 0.25 cups, dill 1 bunch, parsley 1 bunch, vegetable oil 0.25-0.5 cups, salt to taste.

I propose to prepare zucchini for the winter according to the recipe of my sister from Ukraine. Zucchini are crispy, tasty and cook for a short time without sterilization. I prepared zucchini in this way and treated my neighbors in the country. Someone thought it was eggplant, someone thought it was mushrooms, but everyone liked it, so try it and you - I hope you will like it!

Zucchini (or zucchini) - 3 kg.
carrots - 3 pcs.
garlic (half of an ordinary faceted glass) - 0.5 stack.
tomato paste - 0.5 l
vinegar (9%) - 0.5 stack.
vegetable oil - 1 stack.
salt - 1 tbsp. l.
sugar - 1 stack.


Cut zucchini into rings or half rings 0.8-1 cm wide. Mix with sugar, salt, vinegar and vegetable oil. Let stand 30 minutes.


During this time, we rub the carrots. I like to grate for Korean carrots. Pass the garlic through a garlic press or finely chop.


At the same time, we sterilize 0.5 jars in the microwave.

Zucchini gave juice in 30 minutes, add tomato paste, garlic, carrots to them and boil for 30 minutes, after boiling over low heat. During the cooking process, you can adjust the amount of salt or vinegar, if it suddenly seems a little. And also add hot pepper, if someone likes spicy.

We put our vegetables in hot jars, roll them under sterilized lids and wrap them until they cool completely. Yield: Approximately 6 pint jars.

There is a second, more complicated way to fry zucchini, and it consists in spicy garlic sauce. To do this, take 4-5 cloves of garlic for about 2 medium-sized zucchini, finely chop them and put them in a mortar. There also send a pinch of black and a pinch of red ground pepper, 1 teaspoon of table 9% vinegar, 1 teaspoon of sugar. Mix all ingredients well until a homogeneous mass is obtained. We taste and add what is missing to taste.

Such a sauce can be immediately smeared on zucchini, or you can put it separately in a gravy boat, where everyone can put as much sauce on themselves as they need. On top of the zucchini, you can decorate with chopped dill. By the way, you can add a little homemade mayonnaise to this gravy, it will also be very tasty.

Having prepared all the necessary ingredients, we proceed immediately to the process of preparing the workpiece. We select only young zucchini with very thin skin. Rinse them under running cold water. We clean as necessary with a small brush. Let the water drain.




We cut off the stalk and the remains of inflorescences from the front of the zucchini. Cut the zucchini into circles no more than 2.5 cm thick.




Heat up half of the vegetable oil in a frying pan. Fry the zucchini on both sides in hot oil until golden brown.




Then put the finished zucchini on a wide plate for cooling. Rinse dill and parsley under cold water and remove excess water. Cut the greens into pieces one and a half - two centimeters. Peel the garlic and wash. Then grind the garlic with salt in a mortar or on a board. Let's get the banks ready. We scald them with boiling water and dry them. At the bottom of dry, sterile jars, pour the rest of the norm of vegetable oil. Add vinegar, salt, garlic and chopped herbs to the jar. Then we lay the fried zucchini tightly on top.






We fill the jars 2 cm below the neck. We cover the jars with lids and put them in a pot of hot water to sterilize. We sterilize jars with a capacity of 1 liter for forty minutes. Then we seal the jars hermetically and refrigerate.
